yummy Cottage Cheese Cinnamon Rolls

I found this recipe a while ago on someone's blog and I wish I could find the source but searched all this morning and couldn't find it! So sorry source for not giving you credit.. I did change a few things up so I guess I'm not completely copying these from someone else.. These cinnamon rolls are super good and really easy to make. They don't have to rise (no yeast), so they really took me about 10 minutes to throw together and 20 minutes to bake! Easy peasy! I especially like them because they have cottage cheese in there to give you a little protein for the day. As a running-nursing-mom I need extra protein and calcium in my diet, so this is perfect. ENJOY!


Dough
1/3 cup buttermilk (I didn't have buttermilk so you can always substitute buttermilk for regular milk and 1/2 tsp. lemon juice.. well I didn't even have lemon juice so I did 1/3 cup milk and 1/2 tsp. apple juice)
3/4 cup cottage cheese
4 TBS melted butter
1 tsp. vanilla
2 cups flour
1 TBS baking powder
1/2 tsp. salt
1/4 tsp. baking soda

Filling
3/4 TBS melted butter
1/2 cup brown sugar
1 tsp cinnamon
1/4 cup pecans (optional.. I didn't add these.. not a fan)

Glaze
1/2 cup powdered sugar
1/2 tsp vanilla
1 TBS cold milk

-First, combine milk and juice (lemon or apple whichever you decide) and let sit for 5 min.
-Combine milk mixture, cottage cheese, butter, and vanilla in food processor for 10 seconds
-Combine flour, powder, salt, and soda in a bowl- add milk mixture in food processor and process until dough forms.. 10-20 pulses
- Place dough into lightly floured surface and roll out a 12"x15" rectangle.
-Top rolled out dough with melted butter. Combine brown sugar and cinnamon and pecans (if you added them). Spread over buttered dough.
- Roll up dough and cut into 12 equal pieces. Place in a round greased cake pan touching the edges of the pan.
-Bake at 400* for 20-25 minutes. I would check yours at 20 minutes and see what they look like. I actually had to bake mine for about 35 minutes, but I don't know if that is because of the humidity here.
-While the rolls are baking, make the glaze by combining the powdered sugar, vanilla and milk.
-After the rolls are done baking, let them cool for 10 minutes and then drizzle glaze over the top of the rolls and EAT!
